Oh boy am I so glad its almost the weekend!! Starting on Monday, I start a new semester of school with a class that is Monday and Wednesday 5:30-8. Well this wouldn't be so bad except that Sky has a night class on Tuesday and Thursday which basically means that the only time we will get to see each other is the weekend!  As much as its going to suck, it makes me treasure the time I do get to spend with him even more.

{Recipe} Mini Chicken Pot Pies

This is one of my favorites recipes and I am so excited to share it with you!  I love a good pot pie, especially one with a crusty biscuit. This is one of my go-to recipes, its pretty quick to make and there is a little time in between the steps to get other stuff done...like making cookies.


ingredients

 Jiffy Biscuit Mix
Cream of Chicken Soup
2 Chicken Breasts
Frozen Mixed Veggies ( I used the rest of that bag, so only about 1/4 of the bag)
Chicken Bouillon Cube
Milk
Cook the chicken to you liking.  I boil with a chicken bouillon cube to add flavor but you could also grill the chicken.  If you are boiling it only takes about 20 minutes.  After the chicken is cooked through, let it cool and then slice it it up.  I cubed the chicken this time but have shredded it in the past and it is just as good.

Preheat oven to 350.

Mix together the veggies, cream of chicken soup, half a can of milk, and the chicken. The liquid should still be on the thicker side.
I used ramekins for my pot pies so I could have individuals servings.  This recipe would also work if you wanted to use a pie pan. Fill the ramekins about 3/4 full so they don't overflow. 
Mix together the biscuit mix according to the box directions. All you need is water.  Once the dough is thoroughly mixed, plop a pile of dough right on top of the chicken mixture.  Don't worry about spreading it out, the dough will expand while it cooks. 
Bake until biscuit is golden brown on top, about 25 minutes.

{How We Weekend} Sushi, Saki, and Superman

Whew!  The semester is over!  Hallelujah!  Now I get a whole week off to relax and not stress and school work before the new semester starts. That gives me a whole week to churn out all the backed up blog posts that are clogging my posts page.

On Friday we found out that one of our really good friends was accepted in the nursing program through the Air Force! We celebrated on Saturday with mojitos and sushi at one of her favorite restaurants!  I am not a big fan of sushi...at all, but they had amazing beer battered shrimp.  I also tried hot Saki for the first time...also not a fan. Much more of a beer and burgers type of girl!

Saw the new Super Man in the IMAX.  I liked it, Sky thought it was just OK.  But let me tell ya, the man that plays super man is HANDSOME!  My goodness!

{DIY} EAT Sign


Just popping in with a quick DIY!  I have been obsessed with these EAT signs for months and wanted to hang them somewhere in my kitchen.  

I loved these ones that are so popular at Anthropologie but wasn't willing to spend $18 a letter. And I wasn't so sure they were my style.  So I went the cheapo route and got some from Hobby Lobby (on sale!) and painted them up myself!

{DIY} Food Passport

Well I crossed another project off my ever growing list! I found this super cute idea on Pinterest awhile ago, I think it was way down on the list!  
The general idea behind making a food passport is to find restaurants in your hometown that you would like to visit (or revisit), write them down in the book, and stamp them once you have been!  For me, its motivating to try new foods and venture outside my comfort zone. I love to eat but am extremely picky but I think that i'm ready to expand my food horizon, so to speak.
I picked up this adorable polka dot notebook at Target (of course), cut a piece of scrapbook paper I had on hand and got down to business researching yummy restaurants.  The longest part is the research!  Since we live in such a big city there were so many to choose from!  It made me realize how little different places we have been.

The one that's completely random

Juneathon

I am officially signed up for Juneathon!  I loved hearing all about Hanna's workouts last year and hopefully will be able to keep up with the everyday!

Juneathon is an annual festival of bloggers & runners who come together to document their exercise for the entire month of June!  I decided to sign up because I am interested in seeing how my body will change will consistent exercise but also because maybe if I get into the habit of running I will enjoy it a little more.

This is going to be a challenge for me!  I am an awful runner and even more awful at keeping up with exercising.

Day 1 
Walked 1 1/2 miles, 60 Squats
Day 2
60 Squats, yoga
Day 3
1 1/2 mile run, yoga, 60 squats

This weekend was so so relaxing. Friday Sky came home completely drained from work. We threw some chicken on the grill and hung out outside with the boy. Saturday we got up bright and early to go to the flea market. I love wandering around and seeing what little treasures I can find.  We ended up getting a couple little things but then! I found this vintage Dooney & Bourke purse! I went over to admire it, not thinking it would be in my price range, walked away and the lady called me back and said I could have it for $5.  5 dollars!!  I couldn't believe it and snatched it up as quick as I could.

 Our apartment complex recently added a dog park, we went and paid a visit a few days ago.  It is filled with dog training equipment which is weird but Emmett loved running around anyway.  We tried to get him to run through this red tunnel but he was so confused. 
The rest of the weekend was spent relaxing at home and homework. Lots and lots of homework.
